Gulab Jamun | Gulab Jamun with Homemade Khoya


Gulab Jamun

Gulab jamun is a delicious popular and traditional Indian sweet made with khoya. There are many varieties of jamun like potato jamun, kala jamun, bread jamun, paneer jamun etc.. Ingredients

Home made plain Khoya-250 gms
Maida-1/4 cup
Cooking soda a pinch
Milk-1/4 cup
Oil or ghee for frying

For sugar syrup

Sugar-1 1/2 cups
Water-1 1/2 cups
Rose essence few drops(optional)

Method

👉First grate the khoya without any lumps .
👉Add maida,cooking soda,very little milk and make a soft dough without any cracks (mix it very very gently donot apply too much pressure).Allow it to rest for 10 mins.


👉Simultaneously make the sugar syrup by dissolving sugar in water and allow it to boil until  you get sticky consistency(pisukku padham),remove from fire and add rose essence.set aside.
👉Heat oil or ghee in a kadai for deep frying.
👉Now make same lemon sized balls out of the dough very gently making sure that there are no cracks .


👉Deep fry them in hot oil /ghee after reducing the flame . Cook in low heat only by gently flipping the balls,once it reaches golden brown colour remove from fire and add it to warm sugar syrup.


👉Let it soak in sugar syrup for minimum 3 hours.
👉Serve.

Yeilds-15 jamuns.
